Organic Stone Ground Flours
Conventional steel-roller milling raises the temperature of the wheat so high that some of the B vitamins and most of the E vitamins are destroyed. In stone grinding, these vitamins are left intact, thus a much more nutritious product.
THESE FLOURS ARE ALL MADE TO ORDER
Whole Wheat Flour
Fiddlers Multi-Grain Bread
EASY~ HOMEMADE~ NO-KNEAD
3 cups flour....(half white, half whole wheat)
1 cup FIDDLERS12 grain, 7 grain, OR 4 grain Hot Cereal (UNCOOKED)
1 tsp salt
1/4 tsp acive dry yeast
Mix thoroughly;
then add 2 cups water,mix thoroughly again.
NO KNEADING.
You may need to adjust the water a little- dough will be a little goopy... will stick to your hands... not as dry as regular bread dough.
Let it sit in the bowl and rise from 12-24 hours;
then put the dough on a floured board & fold over a couple of times. Form a ball; place the dough in a greased 2-quart (around a 7-8 inch in diameter) Dutch Oven;
cover with a damp cloth and let rise another 1-2 hours.
Preheat oven to 450.
Bake 30 minutes with top on the Dutch oven; then remove the top for another 15 minutes.
Remove from the oven; let sit 10 minutes or so, then remove from pot.
