EASY~ HOMEMADE~ NO-KNEAD

Fiddlers Multi-Grain Bread

3 cups flour (half white, half whole wheat)
1 cup 12 grain, 7 grain, OR 4 grain Hot Cereal (UNCOOKED)
1 tsp salt
1/4 tsp acive dry yeast

Mix thoroughly;
then add 2 cups water,mix thoroughly again.
NO KNEADING.
You may need to adjust the water a little- dough will be a little goopy... will stick to your hands... not as dry as regular bread dough.
Let it sit in the bowl and rise from 12-24 hours;
then put the dough on a floured board & fold over a couple of times. Form a ball; place the dough in a greased 2-quart (around a 7-8 inch in diameter) Dutch Oven;
cover with a damp cloth and let rise another 1-2 hours.
Preheat oven to 450.
Bake 30 minutes with top on the Dutch oven; then remove the top for another 15 minutes.
Remove from the oven; let sit 10 minutes or so, then remove from pot.

FIDDLE CAKES

Fiddle Coffee Cake 1
Follow basic Fiddle cake Recipe on the back of the Fiddle Cake bag. Add Blueberries, strawberries, or other fruit. Pour into a greased cake pan and bake for 45 minutes. Makes one BIG pancake!!


Fiddle Coffee Cake 2
1/2 cup whole wheat bread flour
1/2 cup white flour
1 cup Fiddle Cake Mix
1 egg, lightly beaten
3 tbs. oil
1 tsp. baking powder
3/4 cup orange juice
1/2 cup raisins
Mix together dry ingredients. Mix together wet ingredients. Pour dry ingredients into wet and blend. Add raisins. Bake at 400 degrees for 15 minutes.

Topping
3 tbs. butter
1/2 cup flour
1/3 cup brown sugar
Blend these together, leaving coarse. Spread on coffee cake and enjoy!!


Mexican Corn Bread
2 cups Fiddle cake Mix
1 large egg (or 2 egg whites)
1 cup yogurt
1/4 cup diced canned green chiles
1/4 cup grated jack cheese

Beat together the yogurt and the egg. Mix this gently into the Fiddle Cake Mix. Add the chiles and the cheese. Mix until uniform. Spread into a greased medium loaf pan or 8" square pan. Bake at 350 for 30-35 minutes, or 'til center springs bake when touched.


TOASTED BUCKWHEAT PANCAKE & MUFFIN MIX

Custard Pancakes
2 eggs
3/4 cup yogurt
2 tsp. oil
1/2 tsp.vanilla
1/4 tsp cinnamon
1 cup Tsd Buckwheat Pancake/Muffin Mix
1/4 cup sunflower seeds

Whisk together eggs, yogurt, oil, vanilla, and cinnamon. Stir in Pancake Mix and sunflower seeds. Ladle onto a hot griddle. Cook as regular pancakes. Makes 8-9 medium pancakes.


Waffles
2 eggs
1 cup water
2 tbs. honey
1/2 tsp. vanilla
1/4 cup oil
1 1/2 cup Tsd. Bkwht Pncake/Muffin Mix

Separate the yolks from the whites of 2 eggs. Place the yolks in a large bowl and beat well. Add the water, honey, vanilla, oil, and beat again. Stir in pancake mix. Beat the egg whites until stiff, then fold gently into the batter. Pour 1-1/4 cup of the batter into a preheated, greased waffle iron and bake until done.


Chocolate Chip Cookies
from Toasted Buckwheat Pancake & Muffin Mix
Cream together:
1 egg
1/2 cup butter or margerine
1/2 cup brown sugar (or honey)
1/2 tsp. vanilla
1/4 cup milk
Stir in & mix well:
2 cups Tstd Buckwheat Pancake Mix
Fold in:
1/2 c. choco;ate or carob chips
1/2 c. nuts (optional)
Drop by heaping teaspoonfuls onto a greased cookie sheet and bake at 375 for 8-10 minutes, til lightly brown. Makes 30 medium cookies.


Banana Muffins
Follow the directions for muffins on the package. Add one thinly sliced banana, 1/4 tsp. nutmeg and 1/2 tsp. vanilla.


PENOBSCOT PORRIDGE 0R ISLANDERS CHOICE 7-GRAIN HOT CEREAL

Penobscot Pancakes
Mix together:
1/2 cup uncooked Penobscot Porridge
1/2 cup flour
1 tsp baking powder
Beat in a separate bowl:
1 egg
1 tbs. oil
3/4 cup milk
Combine the two and ladle onto a hot griddle. Makes six medium pancakes.


Penobscot Coffee Cake
1 1/2 cup white flour
3/4 cup Penobscot Porridge OR
Islander's choice 7-grain cereal(uncooked)
1/3 cup brown sugar
3/4 cup milk or juice
1 egg, lightly beaten
2 tsp. oil
Blueberries
Mix together dry ingredients. Mix together wet ingredients. Pour dry ingredients into wet and blend. Add blueberries. Pour into a 9-inch pan and bake at 375 degrees for 25 minutes.

Topping
3 tbs. butter
1/2 cup flour
1/3 cup brown sugar
Blend these together leaving coarse. Spread on coffee cake and enjoy!!


Multi-grain Bread
for bread machines
1 3/4 cup whole wheat bread flour
1 cup white flour
1/2 cup Penobcsot Porridge OR Islander's Choice
1/4 cup sesame seeds
1/4 cup brown sugar
1 tbs yeast
1 tsp. salt
3 tbs. oil
3/4 cup orange juice, milk, or water
Add all ingredients EXCEPT yeast to a bread machine (one that calls for 3 cups of flour, that makes a 1 1/2 pound loaf). Add the yeast to the yeast compartment. Follow bread machine directions.
This bread can be made regularly (without a bread machine) by combining the flours and cereal in one bowl; the oil and liquid in another bowl. Dissolve yeast in 1/4 cup lukewarm water. Add to liquid. Then add wet ingredients to dry. You may need to add more flour if dough is too wet. Knead til smooth. Let rise til almost double twice, punching down in between. Bake at 350 degrees for about 35 minutes.






Porridge Polenta
A great way to use leftover Porridge...
Chill leftover porridge (1 cup for 2 servings). Make patties, dust them with flour, and fry them in oil til golden. Cover with cheese and/or salsa, and enjoy!!


OATS N' BARLEY PANCAKE & BAKING MIX

Waffles
2 eggs- yolks separated from whites
1 cup water
2 tbs. honey
1/2 tsp. vanilla
1/4 cup oil
1 1/2 cup Oats N' Barley Mix
Separate the yolks from the whites of 2 eggs. Place the yolks in a large bowl and beat well. Add the water, honey, vanilla, oil, and beat again. Stir in pancake mix. Beat the egg whites until stiff, then fold gently into the batter. Pour 1-1/4 cup of the batter into a preheated, greased waffle iron and bake until done.


Oats N' Barley Banana Bread
Blend together: 3 medium ripe bananas
1 egg
1/4 cup oil
1/4 cup honey
1/4 cup yogurt (optioal- makes bread very moist)
Stir in:
2 cups Oats & Barley baking mix
Pour into a greased loaf pan and bake for 1 hour at 350 degrees. Cool 10-15 minutes before turning out of the pan.


BELLEWEATHER SCONE MIXES

USEFUL TIPS FOR MAKING BELLEWEATHER SCONES

TIME SAVER... Blend the fat into the dry mix with your food processor- 10 seconds will do the job. The oats, oat bran, and corn meal will be refined, creating a finer crumb. If you prefer the more granular taste, you should cut in fat with a knife.

NEED LESS FAT? Applesauce or cottage cheese can be substituted for the fat (same quantity). You can also substitute fruit juice for milk or cream.

MIX EITHER TOO MOIST OR TOO DRY? If, when all the liquid has been blended into the mix, then is flour at the bottom of the bowl, you may either disregard this extra flour, or add a Tbs liquid. On the other hand if the mix is too moist to handle add 1-2 Tbs flour and blend.

SCONES FOR ONE? To make one scone, add 3 Tbs mix to 3-4 Tbs cider or milk, 1 beaten egg white, and 1-2 tsp canola oil. Bake for 10 minutes.


Belleweather Coffee Cake
1 C. packed brown sugar
1/2 c. applesauce
2 Tbs butter or canola oil
2 eggs or 4 egg whites
1/4 c. plain or vanilla yogurt
1 box Belleweather oat scones with
cinnamon & raisins
1/2 tsp salt (optional)
1/2 tsp. allspice
1/4 tsp. nutmeg
1/4 tsp. ground ginger
1/2 c. orange juice
Preheat oven to 350. Cream together brown sugar, applesauce, & butter or oil. Add eggs 1 at a time, beating well. Stir in yogurt til well blended. . Add the scone mix and the orange juice and blend. Turn into a 9x11"oblong pan & bake 25 minutes or til knife comes out clean.


Fruit Scones
Add 3/4 cup of fresh or unthawed frozen blueberries or cranberries plus 1/2 tsp ground cloves to the basic recipe for Regular Scottish Oat Scones OR-3/4 cup berries to the Cinnamon Raisin Scone mix.
FOR VARIETY- add 3/4 cup chopped nuts (almonds, walnuts, or hazelnuts); OR 2-3 Tbs. minced fresh ginger, OR 2 Tbs. orange or lemon zest - each provide a unique and delicious variation!


Sesame-Orange Scones
1 box Scottish Oat Scone mix
2 tbs&1 tsp grated orange rind
2 tbs maple syrup or honey
1/2 cup & 1 Tbs orange juice
1/3 cup & 1 tbs sesame seeds
3 tbs granulated sugar
Put Scottish Oat Scones mix in a bowl; add 2 T grated orange rind and 1/3 C sesame seeds, cut in butter or shortening; add 1 beaten egg, 2 T honey or maple syrup, and 1/3-1/2 C orange juice (mixture should form a soft dough)..Drop by very heaping Tbs (each should be about 2 inches around). In a small saucepan heat i tbs Orange juice and 3 tbs granulated sugar to boiling; stir in 1 tsp orange rind; brush over the tops of the scones & sprinkle lightly with sesame seeds. Bake at 450 for 15-18 minutes.


Herb & Cheese Scones
You can make these in the regular size, OR bake teaspoonfuls of batter to make delicious hors D'oeurves. Use the Scottish Oat Scone mix .
Cut 2 tbs butter or margarine PLUS 1/2 cop grated cheddar into dry ingredients. Add :
1/2 tsp dried basil
1/4 tsp dried thyme leaves
1/8 tsp ground red pepper.
Beat together 1 egg (or 2 egg whites), 1/2 cup of milk, and 1 tsp dijon mustard. Add to dry ingredients and blend lightly. Bake at 450 degrees til golden: about 8 minutes for mini-scones; 15-18 minutes for large scones.


Date, Nut, & Yogurt Scones
1 box Belleweather Scone Mix
3 tbs brown sugar
6 tbs. cold butter or margarine
1 cup chopped pitted dates
1 cup chopped walnuts
1 8-ounce container yogurt-plain, lemon, or vanilla
Preheat oven to 425. In a medium bowl, mix a box of Belleweather scone Mix with 2 tbs. of the brown sugar. Cut in the butter or margarine with a knife or pastry cutter to pea size pieces. Stir in dates and walnuts. Add yogurt & mix well. Mound the dough into the middle of a buttered baking sheet, pat it into an 8 inch round, and sprinkle with the remaining brown sugar. bake the scone for 15-20 minutes or until cooked through. Cut into 8 large wedges. Serve warm.


Beer Scones
1 box Belleweather Oat Scone Mix
3/4 cup beer
Pour mix into a large bowl. Add beer and stir thoroughly. Divide dough in half; place in 2 small loaf pans. Let stand 10 minutes. Brush the loaves with 6 tbs. melted butter (this makes a wonderful salty crust)Bake for 40 minutes or until bread is firm to touch. Remove from pans and slice with a bread knife. Serve hot!!
